Teriyaki Chicken Lo Mein brings together two flavors I’ve always loved: classic Chinese lo mein noodles and the sweet, glossy richness of Japanese-style teriyaki.

Ingredients

  • 1poundchicken thighscut into bite-sized pieces

  • 1pinchwhite pepper
  • 1teaspoonsoy saucefor marinade
  • 1teaspoondark soy saucefor marinade
  • 1teaspooncornstarch
  • 1tablespoonwaterfor marinade slurry
  • 1tablespooncooking oilfor marinade
  • 2clovesgarlicminced
  • 2tablespoonssoy saucefor sauce
  • 2tablespoonsdark soy saucefor sauce
  • 3tablespoonssakeor water
  • 3tablespoonsmirinor water
  • 1tablespoonbrown sugar
  • 0.5cupchicken stock
  • 16ounceslo mein noodles
  • 3tablespoonscooking oilseparated, high-smoking-point
  • 0.5mediumonionsliced
  • 0.5mediumcarrotshredded
  • 1cupcabbagesliced
  • 3stalksscallionscut into 2-inch pieces

Method

    Marinate the chicken: In a bowl, add the chicken and sprinkle with . Mix until the chicken absorbs the and becomes slightly tacky. Add , , and and mix well. In a small bowl, combine and to form a slurry, then mix it into the chicken. Add and mix again to seal in moisture. Let the chicken marinate while you prepare the other ingredients.

    Prepare the vegetables and sauce: Slice the , shred the , slice the , cut the , and mince the . In a bowl, whisk together , , , , , and until combined.

    Cook the noodles: In a pot over high heat, bring to a boil. Add the and cook for about 3 minutes until just al dente. Transfer to cold to stop the cooking, then drain well.

    Stir-fry the chicken: In a wok over high heat, add 1 tablespoon of . Add the marinated chicken and spread it out. Stir-fry for about 3 minutes until fully cooked. Add the and stir-fry for about 10 seconds until fragrant. Remove and set aside.

    Stir-fry the vegetables: In the same wok over high heat, add 1 tablespoon of . Add the , , and , and stir-fry for about 1 minute until slightly softened but still crisp. Remove and set aside.

    Bring everything together: In the wok over high heat, add the remaining tablespoon of . Add the noodles and stir-fry until heated through. Return the chicken and vegetables to the wok and pour in the teriyaki sauce. Stir-fry for about 1 minute, allowing the noodles to absorb the sauce and turn glossy. Add the and give everything a final toss. Serve immediately.
