So much more than just bread! How to Cook Like a Kıbrıslı: Bulla

Ingredients

  • 225mllukewarm water
  • 100mllukewarm milk
  • 0.5tspcaster sugar
  • 7gfast-action dried yeast
  • 500gstrong white bread flourplus extra for dusting
  • 1tspsalt
  • 50gfresh coriander leavesfinely chopped
  • 10gfresh mint leavesfinely chopped
  • 2tspdried mint
  • 2spring onionsfinely chopped
  • 100gpitted dry black olivesroughly chopped
  • 250ghalloumi cheesecut into 2.5 cm cubes
  • 3tbspolive oil
  • 1small onionfinely chopped

Method

    In a heatproof jug, mix the water and milk, add the sugar and stir to dissolve. Add the yeast, give it a gentle stir and leave to one side for 5-10 minutes until it’s activated. The liquid will rise and turn frothy when ready.

    Meanwhile, sift the flour into a large bowl, stir in the , then make a well in the centre. Pour the activated yeast mixture into the well.

    Combine together with your hands to form a dough. Transfer the dough to a clean surface (add a little extra flour for dusting if necessary) and knead for 8-10 minutes until smooth (or knead in a standing mixer using the dough hook attachment).

    Tuck the dough under to form a nice ball, then place in a large bowl greased with a little . Cover the bowl with plastic film and leave somewhere warm and cosy to prove for an hour.
