Sweet figs, jammy caramelized onions and creamy goat cheese on crispy shortcrust pastry, finished with toasted walnuts, fresh rosemary and a little drizzle of honey. Such a simple combination, but so good — and exactly the kind of savory tart I want to make as we slowly move into fall.

  • 475gonionsabout 2-3 onions, thinly sliced
  • 2tbspolive oil
  • 1.5tbspbalsamic vinegar
  • 8fresh figssliced or quartered
  • 100gsoft goat cheesecrumbled
  • 30gwalnutsroughly chopped
  • 1.5tsphoney1-2 tsp, for drizzling
  • 1tbspfresh rosemaryfinely chopped
  • saltto taste
  • black pepperto taste

Method

    Thinly slice the . Heat the in a large pan, add the and a good pinch of and cook over medium-low heat for 25–30 minutes, stirring occasionally, until very soft, golden and jammy. Add the balsamic and cook for another 1–2 minutes. Let cool slightly.

    Preheat the oven to 200°C conventional / 180°C fan.
