A cold Mediterranean couscous salad with navy beans, vegetables, mint, olives, almonds, and a creamy lemon-parmesan dressing.

Ingredients

  • 0.8cupdry instant couscous
  • 0.8cupboiled water
  • 2tbspred wine vinegar
  • 2tbspfresh squeezed lemon juice
  • 0.5cupplain greek yogurt
  • 2tbspextra-virgin olive oil
  • 1tspkosher salt
  • 0.3tspground pepper
  • 0.5tspanchovy paste
  • 1garlic clovelarge, grated
  • 0.3cupfresh grated parmesan cheese
  • 400mlnavy beanscanned, drained and rinsed
  • 0.3cupCastelvetrano olivesfinely chopped
  • 0.3cupfreshly grated parmesan cheese
  • 0.5cupsundried tomatoesfinely chopped, drained of oil
  • 0.5cupred onionfinely chopped
  • 0.5cupslivered almondstoasted
  • 0.3cupfresh chopped mint
  • 1red peppersmall, finely chopped (about 1 cup chopped)
  • 2persian cucumbersquartered lengthwise and finely chopped (about 1 cup chopped)

Method

    Add the dried couscous and to a medium bowl, stir to combine and then quickly cover with a lid. Let sit for 5 minutes covered and then fluff with a fork. Let cool for 10 minutes.

    Make the dressing by whisking all of the dressing ingredients together in a large bowl.

    After the couscous has cooled for 10 minutes, add the cooled couscous to the large bowl with the dressing along with the drained and rinsed , finely chopped green olives, , finely chopped , finely chopped , toasted , chopped mint, finely chopped and finely chopped cucumber. Let sit for 10 minutes to let the flavors meld together or store in the fridge until ready to serve. Lasts well up to 3 days in the fridge.
