A flavorful spatchcock chicken marinated with fennel, coriander, orange, and herbs, then roasted with oranges, fennel, and shallots in a citrusy pan sauce.

Ingredients

  • 1tbspfennel seeds
  • 1tbspcoriander seeds
  • 60ggranulated sugar
  • 1tbspsalt
  • 2medium orangesorange zestzested
  • 5leavessage leavesfinely chopped
  • 2sprigstarragon sprigsfinely chopped
  • 2tspDijon mustard
  • 60mlextra virgin olive oilfor marinade
  • 1wholewhole chickenspatchcocked
  • 60mlextra virgin olive oilfor pan
  • 2orangesmedium orangessliced
  • 2bulbsfennel bulbstrimmed, fronds reserved, sliced into 6 wedges each
  • 2shallotsmedium shallotsfinely sliced
  • 250mlorange juice

Method

    Using a pestle and mortar, grind the and until coarsely ground.

    Rub the sugar and together until fragrant, then add the ground spices, finely chopped sage, tarragon, , and 60ml of olive oil. Mix to form a paste.

    Spatchcock the chicken (remove the backbone and flatten), then generously spread the marinade all over the chicken.

    Preheat the oven to 220°C (425°F).

    Oil a 9x13-inch baking pan with the remaining 60ml of olive oil. Arrange the orange slices, fennel wedges, and sliced shallots evenly in the pan.

    Place the marinated chicken on top of the vegetables and pierce the skin all over with a knife.

    Loosely cover the pan with foil and bake for 20 minutes. Remove the foil and continue baking for another 30–40 minutes, basting the chicken every 10 minutes with the pan juices.

    Carve the chicken and serve with the roasted vegetables and pan juices, garnished with reserved fennel fronds.
