Orange, Cardamom Olive Oil Cake with Rosemary Drizzle

What do you make when you have an abundance of oranges on the tree? Orange drizzle cake!! The cardamom is subtle, the rosemary ties it all together. It was so unbelievably moist, not too sweet and the flavours accompanied each other perfectly. This cake is like a warm hug from Nan.

Ingredients

  • 2wholeseedless orangeslarge
  • 1cupcaster sugar
  • 180mlextra virgin olive oil
  • 3largeeggs
  • 0.5cupself raising flour
  • 1tablespoonground cardamom
  • 1teaspoonground cinnamon
  • 1.5cupalmond meal
  • 1teaspoonbaking powder
  • 0.5teaspoonsalt
  • 0.5cuplimoncello
  • 0.5cupcaster sugarfor syrup
  • 1small lemonlemon juicejuiced
  • 0.5orangeorange juicejuiced
  • 2sprigsfresh rosemary
  • 250gmascarpone
  • 2tablespoonscaster sugarfor icing

Method

    Stab a hole in each orange and simmer them in water until soft, about 30 minutes. Drain and blend until smooth.

    In a large bowl, mix the blended oranges, , olive oil, and until combined.

    Add the , , cinnamon, , , and . Whisk until smooth.

    Pour the batter into a lined baking dish. Bake at 160°C fan-forced for 45 minutes.

    While the cake bakes, make the rosemary syrup: In a saucepan, combine , , , , and rosemary sprigs. Simmer until sugar dissolves, then remove rosemary stems.

    Once the cake is out of the oven, poke holes all over using a skewer or fork. Pour the syrup over the cake. Let it cool completely.

    Make the icing: In a bowl, whisk and on high for a few minutes until sugar dissolves and mixture thickens.

    Serve the cake with the icing.
