This is my foolproof but seriously show-stopping lamb shoulder that tends to the bones literally slide out clean. Serve with the crispiest potatoes and the lamb top with chimichurri for that pop of color and additional punch of flavor. It's one of those set and forget dishes that takes minimal effort but delivers maximum flavor. I'm talking four hours in the oven and that's basically all the work done for you. With lamb, I always serve them with crispy golden potatoes, soaking up all that delicious lamb juices and finish with that bright fresh chimichurri. Honestly, minimal effort, maximum flavor, and it looks like you spent all day in the kitchen.

Ingredients

  • 1.4kgLamb Shoulder, bone in
  • 3Onions, roughly cubed
  • 1cupWater
  • 1cupChicken Stock
  • 4clovesGarlic, roughly chopped
  • Fresh or Dried Thyme
  • 2tspFlakey Salt
  • Cracked PepperGenerous amount
  • 0.3cupOlive Oil
  • ChimichurriFor serving (optional)

Method

    Preheat your oven to 160°C.

    In a bowl, add your garlic, thyme, salt, pepper, and oil and mix well to combine, then add to your lamb, covering all sides.

    In a baking pot, add onions, , and stock, then add your lamb on top, making sure you add any leftover oil mixture on top.

    Add to your oven for 4 hours. Enjoy with crispy potatoes or any sides you prefer.
