If you love spanakopita but want something easier to make and easier to slice, this loaf is for you. Packed with spinach, feta, cheddar and fresh herbs, it has all the flavour of traditional Greek spanakopita in a simple gluten-free savoury loaf, that is perfect for breakfast, lunch, or a quick snack. Toast it a d add a little salty butter to your slice for something really indulgent but healthy!

  • 40mlextra virgin olive oil
  • 120mlmilk
  • 150gfetacrumbled
  • 100gcheddar cheesegrated
  • 120gEnglish spinachvery finely chopped
  • 3green onionsfinely sliced
  • 0.3cupfresh parsleyfinely chopped
  • 0.3cupfresh dillfinely chopped
  • sea saltto taste
  • freshly cracked black pepperto taste
  • 220gCaputo Fioreglut flour (gluten-free)
  • 2tspbaking powder
  • 1tbsppsyllium husk
  • 1tbspsesame seeds

Method

    Preheat the oven to 180°C fan-forced. Grease and line a loaf tin with baking paper.

    In a large bowl, whisk together the , olive oil and .

    Allow the batter to sit for 5 minutes before placing into the oven, then bake for 35 minutes. Loosely cover the loaf with a sheet of baking paper to prevent the top from over-browning, then continue baking for a further 35 minutes or until golden and a skewer inserted into the centre comes out clean.

    Allow the loaf to cool in the tin for 10 minutes. Transfer to a wire rack and allow it to cool for at least a further 30 minutes before slicing.
