Tomatoes Baked with Rice, Cheese, Basil with Chickpeas

A version inspired by the famous Roman baked stuffed tomatoes, with chickpeas and white wine baked in the tray.

Ingredients

  • 2large tomatoes4 inch roughly
  • 25gArborio rice
  • 20gGrana Padanograted, plus 10g extra for topping
  • 1garlic clovesmall, grated
  • 2tbspolive oilplus extra for drizzling
  • 1handfulbasil leaves
  • 1tbspdried oregano
  • 7.5tbspvegetable stock7-8 tbsp
  • saltplus black pepper to taste
  • black pepper
  • 150gjarred chickpeas
  • 0.5white onionthinly sliced
  • 50mldry white wine

Method

    Preheat the oven to 190°C.

    Scoop the tomato flesh into a bowl, reserving all juices. the inside of the tomatoes and leave upside down for 5–10 minutes, then add any juices to the bowl.

    Roughly chop the tomato flesh and mix with the rice, stock, oregano, basil, garlic, , 20g , and pepper. Leave to soak for 10 minutes.

    Fill the tomatoes with the rice mixture and top each with 5g . There needs to be a decent amount of liquid so if in doubt, add a couple more tbsp stock.

    Add the onion and chickpeas to a baking tray, season, pour over the wine and nestle in the tomatoes. Make sure the onions have enough space.

    Cover loosely with foil and bake for 30 minutes.

    Remove the foil, increase the heat to 200°C and bake for 30–35 minutes more, stirring the onions halfway through and drizzling with a little extra . The tomatoes should be golden and slightly collapsed, with the rice fully cooked.
