A warm and hearty salad featuring crispy roasted baby potatoes, fresh green beans, pan-seared salmon, and a creamy dill dressing.

Ingredients

  • 10ozskinless salmon280g
  • 12ozbaby potatoes350g, halved
  • 7ozgreen beans200g, trimmed and chopped
  • 3cupsarugula60g
  • 0.3smallred onion40g, thinly sliced
  • 0.3cupnonfat Greek yogurt80g
  • 1tbspolive oildivided
  • 2tbsplemon juice
  • 2tbspfresh dillchopped
  • 0.5tspgarlic powder
  • salt and black pepperto taste

Method

    Heat oven to 425°F (220°C). Toss potatoes with 2 tsp oil, salt and pepper. Roast cut-side down for 25–30 minutes, until browned and tender.

    Boil for 4–5 minutes until tender-crisp. Drain well.

    Pat salmon dry and season with salt and pepper. Heat the remaining 1 tsp oil in a skillet; cook salmon for 3–5 minutes per side, until it reaches 145°F (63°C). Break into large flakes.
