The technique
Method

Curl the fingers of your guiding hand under, using your knuckles - not your fingertips - as the blade guide.

Rest the tip of the knife on the board and keep it there as the pivot point.

Rock the blade up and down through the food, moving the heel of the knife side to side while the tip stays put.

Gather the food back into a pile with the flat of the blade every few strokes.

Keep the motion slow and controlled until it feels natural, then build up speed.
The fastest, safest way to chop herbs and vegetables into an even, fine dice using a rocking motion instead of lifting the knife off the board.
