The technique
Method

Have your base mixture in a large bowl and the lighter, airy mixture ready alongside it.

Add about a third of the light mixture to the base first and stir it in firmly - this loosens the base and does not need to stay airy.

Add the rest of the light mixture. Using a large metal spoon or spatula, cut straight down through the center of the bowl to the bottom.

Sweep the spoon along the bottom and up the far side of the bowl, turning the mixture over on itself in one motion.

Rotate the bowl a quarter turn and repeat. Stop the moment no streaks remain - overmixing knocks out the air you just folded in.
The gentle technique for combining a light, airy mixture (whipped egg whites, whipped cream, a meringue) into a heavier base without knocking the air back out. Get this right and your souffles rise, your mousses stay light, and your cakes keep their crumb.
