Creamy silky amarula milk tarts with a crispy buttery shell. Perfect individual portions made with almond pastry.

Ingredients

  • 60gicing sugar
  • 35gcornflour
  • 20gcake flour
  • 0.3tspfine salt
  • 1tspvanilla extract
  • 120mlAmarula Cream Liqueur
  • ground cinnamonfor finishing
  • 125gunsalted buttersoftened
  • 75gicing sugar
  • 1large eggabout 50g
  • 1tspvanilla extract
  • 220gcake flour
  • 30galmond flourfinely ground
  • 0.3tspfine salt
  • 2egg yolkfor egg wash
  • 2tspcreamor milk for egg wash
  • 600mlfull-cream milk
  • 1cinnamon stick
  • 30gunsalted butterfor filling
  • 3large eggs

Method

    together softened butter and until smooth. Beat in the egg and vanilla. Fold in , , and salt. Bring the dough together, wrap in plastic, and refrigerate for about 1 hour.

    Roll the pastry thin and line small tart tins. Use rice as weights and blind bake at 180°C for 15 minutes until the pastry starts to set. Remove the weights and bake for another 5 minutes.

    Carefully unmold the shells, then brush with egg wash (2 egg yolks mixed with 2 tsp or milk). Return to the oven and bake for another 8–12 minutes until golden and glossy.

    For the filling: Gently heat milk, butter, and a in a saucepan. Let the cinnamon infuse for about 5 minutes. In a bowl, whisk together eggs, , , , and salt until smooth. Slowly whisk in the warm milk, then return the mixture to the saucepan. Cook gently, stirring constantly, until thick and silky.

    Remove from heat and stir in and . Fill the pastry shells with the mixture. Refrigerate for at least 4 hours, or overnight.
