I wish people knew how easy it is to make homemade millionaire shortbread. It's the holy trinity of desserts: buttery shortbread, gooey caramel, and rich chocolate. Requires patience but is easy to prepare in advance.

Ingredients

  • 100gcaster sugar
  • 240gall-purpose flour
  • 1egg yolk
  • 1tspsaltfor shortbread
  • 200glight brown sugar
  • 115gbutterfor caramel
  • 397gsweetened condensed milk1 can
  • 60mlmolassescan be substituted with golden syrup
  • 1tspsaltfor caramel
  • 225gdark chocolate or milk chocolatechopped
  • 80mlheavy cream

Method

    Preheat the oven to 175°C (350°F) and line a 20x20 cm (8x8 inch) pan with parchment paper.

    Cream together the and until smooth and fluffy. Mix in the flour, and until a soft dough forms.

    Press the dough evenly into the pan and bake for 20–25 minutes, until lightly golden. Let cool completely.

    In a saucepan over medium-low heat, combine the , brown sugar, condensed milk, , and .

    Stir continuously until all ingredients have melted and fully combined.

    Increase the heat to medium and continue stirring constantly for 10 minutes, until the caramel becomes thick and golden brown.

    Pour over the cooled shortbread and spread evenly. Refrigerate until set (minimum 1-2 hours).
