Carrot cake transformed into muffins filled with cream cheese frosting and topped with maple caramelized pecans.

Ingredients

  • 230gall purpose flour
  • 7gbaking powder
  • 5gbaking soda
  • 5gfine sea salt
  • 3gcinnamon
  • nutmeg1/4 tsp
  • 140ggranulated sugar
  • 140glight brown sugarpacked
  • 115gavocado oil
  • melted butter2 1/2 tsp
  • buttermilk1/2 cup plus 1 tbsp
  • 85gunsweetened applesauce
  • 3eggs
  • vanilla2 tsp
  • 240gfinely grated carrotspacked
  • 120gcrushed pineapple, drained
  • 240gchopped pecansfor topping, about 1 cup
  • maple syrup2 tbsp for topping
  • 453gcream cheese, softened16 oz
  • powdered sugar2-3 cups
  • vanilla extract2 tsp for frosting

    Preheat oven to 375°F. Line a 12 cup muffin pan.

    In a large bowl, whisk sugars, and . Then add , , and applesauce until smooth.

    To the wet ingredients, add the flour, , , salt, and . Mix until well combined.

    Fold in the grated carrots and drained pineapple. Fill muffin liners 3/4 full.

    In a separate bowl, add the softened cream cheese, and . Mix with a hand mixer until smooth.

    Add the cream cheese frosting to a piping bag and fill the center to the top.

    Bake the muffins at 375°F for 5 minutes, then lower the temperature to 350°F and bake for 18 more minutes. Cool completely before adding more frosting or refrigerate for at least 20 minutes before decorating.

    For the topping: Chop the pecans, add to a pan and sauté for 1 minute, add the 2 tbsp , combine well and set aside to cool down.

    Decorate the top of the muffins with more cream cheese frosting, add the caramelized pecans and enjoy.
