This twist on the classic beef bolognese uses ground chicken to create a lighter version of classic sauce but still delivers on flavour! It's fantastic served over your favorite pasta for the ultimate comforting meal. Leftovers will last for up to 3 days in the fridge or 3 months in the freezer so it's the perfect meal prep too!

Ingredients

  • 1tbspolive oil
  • 1onionfinely diced
  • 0.5cupcarrotfinely diced
  • 0.5cupceleryfinely diced
  • 0.8tspsalt
  • 1lbsground chicken
  • 3clovesgarlicminced
  • 0.5tspdried thyme
  • 2tbsptomato paste
  • 0.7cupred wine
  • 14ozcanned crushed tomatoes
  • 0.8cupchicken stock
  • 0.5cupcreamor dairy free creamer

Method

    In a large pot on medium high heat add the and once hot add in the , and and sprinkle with . Saute for 4 minutes until the vegetables begin to soften and then add the . Use a wooden spoon to break the up into small bits as it cooks.

    Once the chicken is no longer pink add the , thyme and and stir so that it's all coated in the .

    Add in the and use a spoon to scrape off any brown bits from the bottom of the pot. Leave to cook until most of the wine has evaporated.

    Add in the canned tomatoes and and leave to simmer on medium low heat for 30 minutes.

    After 30 minutes, add in the , stir and simmer for an additional 10 minutes.

    Serve the sauce over your favorite pasta of choice.
