A little better-for-you cookie with no refined sugar. They are crispy around the edges, soft and chewy in the middle, with a mix of dark chocolate, cacao nibs and crunchy pecans.

150gunsalted buttermelted
180gcoconut sugar
1large egg
1egg yolk
1tspvanilla extract
150gall-purpose flour
130galmond flour
1tspbaking soda
0.8tspflaky sea saltplus more to finish
90gdark chocolateroughly chopped
70gcacao nibs
75gpecansroughly chopped
Method

Whisk the melted butter and together until smooth and glossy.

Add the egg, and vanilla and whisk until combined.

Add the flour, , and salt. Fold until just combined - don’t overmix.

Fold through the , and .

Chill the dough for 30–45 minutes.

Preheat the oven to 180°C and line a baking tray with parchment paper.

Divide the dough into balls and place them on the tray, leaving space between each one. (I baked 6 at a time)

Bake for 12–15 minutes, until the edges are golden and the centers are still soft.

Sprinkle with a little and leave to cool on the tray before serving.
