This chocolate Guinness cake is rich, dark and indulgent! Topped with a Bailey's and marscapone frosting this one is great for chocolate and non-chocolate lovers alike.

Ingredients

  • 240mlGuinness
  • 140gsalted butter
  • 70gcocoa powder
  • 2tbspBlack Cocoa Powderor additional cocoa powder
  • 300gDark Brown Sugar
  • 50gGolden Caster Sugar
  • 180mlsour creamor crème fraiche
  • 2large eggs
  • 4gFlaked Salt
  • 2tbspvanilla extract
  • 250gplain flour
  • 2.5tspbaking powder
  • 100gDark or Milk Chocolate Chips
  • 3tbspBailey's Irish Cream
  • 140gicing sugar
  • 300gMascarponeat room temperature
  • 200mldouble cream
  • 1tbspvanilla extract or bean paste
  • 1pinchflaked salt

Method

    Preheat oven to 160°C Fan. Grease a 23cm tin with melted butter and set aside. I like to dust mine with a little too.

    In a large saucepan, combine the and butter. Place over medium-low heat until the butter melts, then remove from heat. Add the and caster sugar, and whisk until well blended.

    Combine all the ingredients together and bake for 55 minutes to 1 hour, or until risen and firm. A skewer inserted into the centre should come out clean.

    Let the cake cool completely in the pan on a wire rack.

    Add all the topping ingredients together into the bowl of your stand mixer and using the beater attachment, beat together until thick and creamy.

    Once the cake is fully cooled, remove it from the pan and place it on a serving plate or cake stand. Spread the frosting over the top of the cake only, so it resembles the creamy head of a pint of .
