A quick and easy blondie recipe, with a cinnamon swirl and cream cheese frosting, a true sweet treat and easily customisable!

Ingredients

  • 170gunsalted buttercountrylifeukbutter
  • 75gdark brown sugar
  • 150ggranulated sugar
  • sea saltpinch
  • 1medium eggmedium
  • 1tspvanilla extractnielsenmasseyuk
  • 170gplain flourhomepridebaking
  • 100gwhite chocolateAdd 50g of dark or milk chocolate if you want this more chocolate-y
  • 50ggranulated sugarfor cinnamon swirl
  • 25gdark brown sugar
  • 10gcinnamon
  • 200gfull fat cream cheeseFor the cream cheese frosting
  • 100gicing sugarFor cream cheese frosting

Method

    Make space in the fridge for the cooked blondies.

    Preheat oven to 160°C (fan).
  3. 3
    In a microwave safe bowl, melt the butter.
  4. 4
    Add both white and brown sugar to the mixing bowl.
  5. 5
    Pour in melted butter and mix until smooth.
  6. 6
    Add vanilla & salt to the mixture, stir to combine.

    Add the egg and beat until smooth.

    Add flour, mixing until only a few white marks are left.

    Using a sharp knife, chop the chocolate into chunks.

    Pour in the chocolate chunks and stir through.

    Add the mix into the greased & lined 20x20 tin & smooth.

    For the swirl, add both the white and brown sugar to a bowl, along with the and mix well.

    Spoon the swirl mixture over the blondie batter & swirl through.

    Bake at 160°C for 25 minutes.

    Allow to cool on a wire rack for 5 minutes.

    Pop in the fridge to set.

    Once cool, beat the cream cheese & until smooth.

    Pour over the blondie, sprinkle with .

    Leave to set in the fridge.
