Rich, fudgy espresso brownies topped with a whipped coffee white chocolate ganache that tastes like your favorite coffee shop drink in dessert form.

Ingredients

  • 0.5cupunsalted butter114g
  • 0.3cupDutch process cocoa powder22g
  • 7ozsemisweet chocolate, chopped198g, divided into 4 oz and 3 oz
  • 0.8cupgranulated sugar165g
  • 0.5cupbrown sugar50g
  • 2large eggsroom temp
  • 1.5tspvanilla
  • 0.8cupall-purpose flour94g
  • 0.5tspsalt
  • 1Tbspespresso powder
  • 250gheavy cream
  • 200gwhite chocolate, chopped
  • 2Tbspespresso powder (for ganache)

Method

    Heat the cream in a saucepan over medium heat until steaming, but do not boil.

    Transfer cream to a bowl, add white chocolate, let sit for 1-2 minutes, then stir until melted. Add and whisk (or use an immersion blender) until combined. Cover with plastic wrap and refrigerate to cool.

    Preheat oven to 350°F and line an 8x8-inch baking pan with parchment paper.

    Melt butter in a saucepan over low heat. Stir in cocoa powder, then remove from heat and stir in 4 oz of the chopped chocolate until melted.

    In a separate bowl, beat eggs and both sugars for 3-4 minutes until glossy and sugar has dissolved. Add and the warm chocolate mixture, stirring to combine.

    Stir in flour, , and . Fold in the remaining 3 oz of chopped chocolate.

    Spread batter into the prepared pan and bake for 30-35 minutes, until a toothpick comes out with just a few moist crumbs.

    Allow brownies to cool completely in the pan.

    Whip the cooled ganache on medium speed until thick and holding soft peaks. Spread or pipe over the cooled brownies and top with shaved chocolate.
