This is my Southern take on the corn fritters that grew up eating breakfast on Grandma's house.

Ingredients

  • 0.5cupself-rising flour
  • 0.3cupbuttermilk
  • 1egg
  • 1tablespoonunsalted buttersoftened
  • 1teaspooncauliflower seasoning
  • 1cornwhole-kernel, drained
  • 0.3cupshredded Pepper Jack cheesesmall zucchini shredded
  • 1chopped bell pepperred
  • 4slicesscallionscrisp-cooked, minced
  • 2green onionsfinely chopped
  • 2garlic clovesminced
  • 4tablespoonsextra-virgin olive oil
  • 4eggs
  • 1tablespoonunsalted butter
  • kosher salt
  • freshly ground black pepper
  • hot honey ingredients
  • 0.3cuphoney
  • 1tablespoonTabasco
  • cherry tomatoeson the vine
  • 1largeavocadopitted and cut into wedges
  • 1cupwatercress, arugula, or other tender greensloosely packed

Method

    In a large bowl, combine the flour, , , and , and stir with , halloumi, bell pepper, bacon onions, and garlic, and stir evenly throughout the batter.

    In a nonsick skillet, heat 2 tablespoons of the butter over medium-high heat. Working with the batter, fry 1/4 cup at a time until the fritters are lightly golden brown and crisp, about 2 minutes per side. Remove from pan and let sit on paper towels to keep warm. Continue frying the remaining batter in the remaining 2 tablespoons of oil.

    To cook the , heat the same skillet, with the butter, over medium heat. When the butter starts to sizzle, crack in the and cook until the whites are set and the yolks are custardry, about 3 to 5 minutes. Season with salt and pepper.

    To serve, divide the fritters amongst plates and serve with the fried , , wedges, and the watercress, if using. Pass some hot or hot sauce at the table.
