A soft, fluffy sweet dough that's perfect for cinnamon rolls, braided buns, sticky buns, or any homemade sweet bread. This version is shaped into a three-strand braid and baked in a muffin tin, with a secret of warm cream poured over before baking for extra softness and gooeyness.

Ingredients

  • 580gbread flour
  • 10gsea salt
  • 10ginstant yeast
  • 80gcaster sugar
  • 2eggs
  • 95gunsalted buttermelted
  • 250mLwarm milk
  • 110gbrown butter (or softened butter)for filling
  • 150gbrown sugarfor filling
  • 16gcinnamonfor filling
  • 1tspground cardamomoptional but YUM
  • 120mLwarm creamto pour over before baking

Method

    Preheat the oven to 180°C.

    Mix the flour, salt, yeast and sugar.

    Whisk together the milk, and melted butter.

    Combine everything and knead for 10–15 minutes until smooth.

    Cover and let the dough rise for 45 minutes.

    Mix the filling ingredients into a paste.

    Roll the dough into a 50 × 30 cm rectangle.

    Spread the filling, fold into thirds and cut into 12 strips.

    Shape into a simple three-strand braid (or any shape you like) and place in a muffin tin or baking tray.

    Let rise for 15 minutes.

    Pour the over the buns.

    Bake for 22 minutes, until golden.
