These quick, easy and full of flavour Korean-style beef pockets made with extra lean beef mince, gochujang, and mozzarella, baked in tortillas until golden and crisp are thw perfect mid-week meal when you don't know what to cook!

Ingredients

  • 250gextra lean beef mince
  • 0.3cupsoy sauce
  • 1tbspbrown sugar
  • 1tbspsesame oil
  • 1tbsprice wine vinegar
  • 1tspgingergrated
  • 1clovegarlicminced
  • 0.5tbspgochujang
  • 3large tortillas
  • 200gmozzarellagrated
  • 1spring onionfinely sliced
  • 2tspchilli oiloptional

Method

    Heat a pan over medium-high heat. Add beef mince and cook, breaking it up, until browned.

    Add , , , , , , and . Stir and simmer for 3–5 minutes until glossy and slightly sticky. Remove from heat.

    Preheat oven to 180°C. Line a baking tray with baking paper.

    Lightly dip tortillas in water if stiff, then cut each tortilla in half.

    Spoon beef mixture into the centre of each tortilla half. Top with and fold into triangles.

    Arrange on tray, sprinkle with a little extra , and bake for 20–25 minutes until deeply golden and crisp.
