Lemon & Poppyseed Scones with Blueberry Jam

A delicious recipe for lemon and poppyseed scones served with homemade blueberry jam and clotted cream. The jam/cream order is not even up for debate!

Ingredients

  • 1eggplus 1 extra for glazing
  • 75mlmilk
  • 1lemon zestfrom 1 lemon
  • 1lemon juicefrom 1 lemon
  • 2tbsppoppyseeds
  • 40gcaster sugar
  • 250gself-raising flour
  • 2tspbaking powder
  • 75gcold buttercubed
  • 1cupblueberriesfresh or frozen
  • 3tbspcaster sugar
  • 0.5lemon juicefrom 1/2 lemon
  • 1tbspcornflourdissolved in a little water
  • clotted creamto serve

Method

    Whisk the , , , , and sugar in a large bowl and set to one side.

    In a separate bowl, combine the flour, and . Lightly crumble the mixture with your fingertips until it resembles breadcrumbs, being careful not to overwork the dough or melt the butter.

    Add the flour mixture to the lemon & poppyseed mix and stir until a dough forms (add more flour if needed).

    On a floured surface, shape the dough into a rough square.

    Using a floured rolling pin, roll the dough until it is approximately 2.5cm thick.

    Cut out scones using a 2.5 inch (6cm) wide round cutter and place them onto a lined baking tray.

    Beat the remaining and lightly brush the tops of the scones with the glaze.

    Preheat the oven to 200°C (180°C fan) and bake for 12-15 minutes or until golden brown and risen.

    To make the jam, place , sugar and in a small saucepan over medium heat.

    Once thaw, stir until sugar dissolves and begins to form a jam; continue cooking for 10 minutes.

    Add the dissolved and cook for another 5 minutes, stirring continuously, then remove from heat.

    Slice or tear open the warm scone, spread with a generous layer of , and top with a dollop of blueberry jam.
