It's rich, creamy, packed with flavor, and topped with an optional but highly recommended sticky and crispy mince. The best part is everything cooks in the one pot so that it's mostly hands-off and bonuses less washing up for you.

Ingredients

  • 0.5tbspneutral oil
  • 1clovegarlic cloveminced
  • 0.5thumb-sized piecegingergrated
  • 1tbspred curry paste
  • 1tsppeanut butterheaped, or use sesame paste
  • 1tspmiso paste
  • 1tbspsoy sauceor more to taste
  • 2cupschicken stock
  • 0.5cupsoy milkor coconut milk
  • shiitake mushroomssliced
  • bok choyhalved or sliced
  • instant ramen noodles
  • eggsclean, uncracked; see food safety note
  • 0.5packlean mince~250g, or shredded tofu for vegetarian
  • 1tbspoyster sauce
  • 1tbspsoy saucefor mince
  • 1tbspdark soy sauce
  • 1tbspsweet chilli sauceor honey
  • spring onionsliced, optional
  • sesame seedsoptional
  • chilli oiloptional
  • kimchioptional
  • lime wedgeoptional

Method

    Cook the mince until browned. Stir through the , , , and and cook for 2–3 minutes until glossy. Set aside.

    Meanwhile, heat the oil in a pot. Cook the garlic and for 1 minute, then stir in the curry paste, , miso and .

    Pour in the stock and and bring to a boil.

    Add the (if using), mushrooms and noodles and cook for 6½–7 minutes or until the are cooked to your liking and the noodles are tender. Add the for the final 30 seconds.

    Transfer the to an ice bath, peel, then divide the noodles, vegetables and broth between bowls.

    Top with the sticky mince, sliced egg, and your favourite toppings.
