Creamy, aromatic white sausage ragu served over pappardelle with a crunchy pangrattato topping. Part of the 'Let Him Cook' series.

Ingredients

  • 200ggood quality coarse pork sausage meat
  • olive oil
  • 1largeshallot
  • 1stickcelery
  • 1sprigrosemary
  • 2clovesgarlic
  • 150mldouble cream
  • 100mlchicken stock
  • 25gparmesan
  • dried breadcrumb
  • salt
  • pepper

Method

    Prepare the soffritto: finely dice the and . Strip the leaves and finely slice the .

    Remove the skin from the Italian sausage and break the meat into a pan with a drizzle of . Cook over medium heat.

    Add the sliced and to the pan and cook until fragrant.

    Add the soffritto ( and ) to the pan, season with and , and cook until the fat has rendered from the sausage.

    Pour in the and reduce by about half. Then add the , lower the heat, and keep warm while you prepare the pangrattato.

    For the pangrattato: coat the breadcrumbs in , season with and , and bake until golden.

    Cook the pappardelle in salted boiling water for a couple of minutes less than the package instructions. Reserve some pasta water.

    Transfer the pasta to the sauce pan with a splash of pasta water and let it finish cooking over the heat.

    Turn off the heat, stir in the grated and a crack of black .

    Serve the pasta with extra sauce on top and a generous amount of pangrattato.
