A fall baking recipe with phyllo dough, pears, and a maple brown sugar syrup that soaks into every layer.

  • 16ozphyllo doughthawed according to package instructions
  • 12tbspunsalted buttermelted and cooled slightly
  • 1cupheavy cream
  • 0.3cupmilk
  • 0.8cupbrown sugar
  • 0.5tspground cinnamon
  • 1tspkosher salt
  • 2large eggs
  • 1tspvanilla extract
  • 1tspalmond extract
  • 2pearsmedium, sliced 1/4-inch thick, ripe but firm
  • 0.3cupsliced almonds
  • 0.8cupmaple syrup
  • 2tbspbrown sugarfor syrup
  • 2tbspwater
  • 2cinnamon sticksor 1/2 tsp ground cinnamon
  • 1pinchsalt

Method

    Preheat the oven to 350°F / 180° C and lightly grease a 9x13-inch baking dish.

    Unroll the and cover with a damp towel to keep it from drying out.

    Brush each sheet of phyllo with melted butter and fold into a crinkled, accordion-like shape, placing them side by side in the prepared dish.

    In a medium bowl, whisk together , , , cinnamon, , eggs, , and until smooth.

    Pour the custard mixture evenly over the phyllo layers.
