This zingy, salad is perfect for those warmer evenings. Minimal cooking and super fresh summer ingredients

Ingredients

  • 2nestsvermicelli rice noodles50g each
  • splashtoasted sesame oilor any neutral oil
  • 3tbsppeanut butterPip & Nut brand preferred
  • 1tbspsoy sauce
  • 1tbspsrirachaCooks' Ingredients brand preferred
  • 1lime½ juiced, ½ cut into wedges
  • 160gcucumber
  • 1carrotlarge
  • 150gcherry tomatoeshalved
  • 100gFresh prawnspack
  • 0.5packcorianderfrom a 25g pack, leaves picked
  • 2tbspcrispy fried onionsCooks' Ingredients brand preferred

Method

    Boil the kettle. Put the noodles in a large heatproof bowl, cover with just-boiled water, then leave for 5-10 minutes until soft. Drain, rinse under cold water, then shake dry and toss with a splash of sesame oil.

    Meanwhile, make the dressing by mixing the in a bowl with 2 tbsp just-boiled water, then stirring in the , and juice.

    Halve the lengthways and finely slice, then cut the into matchsticks. Divide the noodles between shallow bowls and top with the , , tomatoes and prawns. Drizzle over the dressing, scatter with the and crispy onions, then serve with the wedges on the side for squeezing.

    Toss the prawns in a little chopped chilli, zest and some juice and pan fry until fully cooked. Serve on top of the peanut pasta salad
