A copycat recipe for the classic Pret A Manger's Fruit, Oat & Spelt Cookie, with a chewy texture and crunchy outside, and the option to add orange zest for a twist and to add to the flavour.

Ingredients

  • 125gWholegrain Spelt Flour
  • 150gJumbo Porridge Oats
  • 0.5tspBicarbonate of Soda
  • 0.5tspGround CinnamonAdd a tiny pinch of nutmeg if you have
  • 100gButter or margarinemelted or softened
  • 100gDemerara Sugar
  • 4tbspMaple Syrup/AgaveI forgot to add this!
  • 1Large Egg
  • 1tspVanilla Extract
  • 100gChopped Dried Fruit (Raisins & Cranberries)Mix-ins
  • Seeds (Pumpkin/Linseed)Mix-ins
  • Orange zestmy addition, grated zest of one orange

Method

    Preheat oven to 180°C (350°F) and line baking trays with baking paper.

    In a bowl, combine dry ingredients: spelt flour, oats, , and and a pinch of nutmeg.

    In a separate bowl, cream together the butter and sugar, then, using a wooden spoon or spatula, mix in the egg, maple syrup, and .

    Add dry ingredients to wet, mixing until just combined. Fold in dried fruit, seeds, and (the batter should be crumbly)

    Roll into walnut-sized balls using your hands (about 1-2 tablespoons each) and place on prepared trays, leaving space for spreading as they bake.

    Bake for 10–15 minutes until golden brown (I like these a little more cooked so they develop a nice caramelised flavour and crunch, so tend to bake them for a little longer until the colour deepens a bit more). Allow to cool on the tray for a few minutes before moving to a wire rack.
