Watermelon & lime ice lollies
A sprinkle of Mexican-style seasoning takes these zingy lollies into gourmet territory. Bonus idea: freeze the mixture in an ice cube tray to use in your next tequila cocktail.
Ingredients
- 0.5mini watermelon800g unpeeled weight, 400g peeled weight, roughly chopped
- 2tbspagave nectar
- 0.3tspfine sea salt
- 2unwaxed limeszest and juice of 1, 1 cut into wedges
- Cooks' Ingredients Mexican Style Seasoningfor dipping
Method
- 1Whizz the watermelon in a blender with the agave, salt, lime zest and lime juice until smooth.
- 2Pour into 4 ice lolly moulds and freeze for 4-6 hours.
- 3Serve with the lime wedges and Mexican-style seasoning for dipping.
