A refreshing, easy-to-make summer snack or dessert made with frozen cubed watermelon and citrus juice - make as much or as little as the crowd needs! This recipe requires you to freeze the watermelon overnight, so has a longer "cook" time; but once frozen this comes together in minutes. This serves 2 but can easily be scaled up or down as you need.

Ingredients

  • 2.5cupswatermelonCubed then frozen
  • 2tspFresh lemon/lime juice
  • 0.5LimesZest of half the lime
  • 2tspMint leavesWashed and finely minced
  • 0.5tbspHoney
  • Pinch of salt
  • 1tbspWarm waterTo help with blending

Method

    Cut your into bite sized chunks (removing any seeds) and place in a zip lock bag
  2. 2
    Freeze the overnight
  3. 3
    Add your frozen , lime juice, lime zest, mint, , salt to a food processor or blender and blitz until it reaches sorbet consistency. (Add water as needed until you reach the consistency you desire)

    Scoop and serve immediately
