This easy recipe is delicious and a great staple to have on hand during the week. The longer it sits, the better it gets! Level up the protien game and add some grilled chicken or salmon.

280gcouscousYou can substitute bulgar wheat or do a 1/2 mixture of quiona if desired
1tablespoonOlive oil
2cupschicken stock
1cupchickpeasrinsed and drained
2cupscherry tomatoesquartered
0.5red onionfinely chopped
0.5cupkalamata olivesroughly chopped
1cupmini cucumbersdiced small (about 2 cucumbers)
1cupbell pepperdiced small (1 medium)
1cupfresh curly parsleychopped
0.3cupfresh mintchopped
1.5cupsfeta cheesecrumbled, for garnish
kosher saltto taste
freshly ground black pepperto taste
0.5cupextra-virgin olive oil
4tablespoonsred wine vinegar
4tablespoonslemon juicefrom about 2 lemons
1clovegarlicgrated
1teaspoondried oregano
1teaspoondried basil
0.5teaspoonred pepper flakes
Method

In a measuring cup, add the , , , , , , , salt and pepper. Whisk vigorously until the dressing has slightly thickened.
Tip: Sprinkle a little salt on your tomatoes and set them aside while making the dressing. They'll let out a bit of juice and once combined with the dressing it really adds to the flavour!

In a medium saucepan, add chicken broth and butter and bring to a boil. Add the , stir, then remove from heat. Cover with a lid and let rest for 5-10 minutes (according to package directions). Uncover and fluff with a fork.
Meanwhile, drizzle your with and place on a baking tray and into a preheated oven at 180°C until crispy (about 10-15 mins)

When In a large mixing bowl, combine the warm , , tomatoes, , , cucumber, , fresh parsley, and a pinch of salt and pepper.

Pour the dressing over top and toss thoroughly until well combined. Taste and adjust for seasoning if desired.

Serve and top with a generous amount of feta and any protien you choose (I like a bit of grilled chicken and a dollop of humous)
