This is my bacon & egg pie (quiche?) recipe. I don’t put a pastry top on mine because one small packet of pastry just lines the bottom and sides of my tin, so I only buy one packet 😆 I like a scrambled egg in my pie, but you can leave eggs whole or do half scrambled and some whole…up to you. This is a super easy dinner-my boys love it. Serve with some t-sauce and a crisp salad!

Ingredients

  • 10eggssize 7 (or 12 size 6)
  • 150mlcream

Method

    Preheat oven to 180°C (fan bake) or 190°C conventional.

    Slice thinly and cook in a little with a pinch of until just browned. Set aside to cool completely (or pop in the freezer to cool quicker if you’re in a hurry).

    Whisk with , a little , and lots of . Set aside.

    Line your tin with baking paper for easy removal.

    Cut pastry to line the tin. I smoosh the edges together with a fork so there are no leaks.

    Spread cooled over the bottom, then add bacon and a handful of . Pour over the egg mixture and top with a little more cheese. Fold the sides of the pastry in and brush the exposed pastry with some of the egg mixture.

    Bake 45–60 minutes. Poke a knife in the center to make sure it’s set. Let sit 5 minutes before slicing.
