A rich and moist chocolate cake with a whipped chocolate ganache topping - this easy recipe is a crowd pleaser and really such a great chocolate cake recipe that can be jazzed up with other icing choices, it's so versatile

Ingredients

  • 2cupsplain flour
  • 2cupscaster sugar
  • 0.8cupscocoa powder
  • 2teaspoonsbaking powder
  • 0.5teaspoonbicarbonate of soda

  • 1cupneutral oilor melted butter
  • 1cupsour creamor Greek yoghurt
  • 1tablespoonvanilla extract
  • 1cuphot freshly brewed coffeeor hot boiling water
  • 312gmilk chocolatefinely chopped
  • 312gthickened cream

Method

    Preheat your oven to 170°C fan forced. Grease and line 2 x 8-inch cake tins with baking paper and lightly spray with cooking oil.

    Make a well in the centre and add the , oil (or melted butter), (or Greek yoghurt) and . Mix until just combined.

    Bake for 55 minutes, or until a skewer inserted into the centre comes out clean.

    Leave the cakes to cool in the tins for 10 minutes before transferring them to a wire rack to cool completely.

    Using a hand mixer, whip the ganache until it becomes lighter in colour and holds soft peaks.

    Place one cake layer onto a serving plate. Spread a generous layer of whipped ganache over the top. Add the second cake layer and finish by spreading the remaining whipped ganache over the top.
