This ciabatta is so easy to make, but make it at your own risk because once you make it, you will never be able to eat store-bought bread again. It's that good.

Ingredients

  • 650gwater
  • 1tbspinstant yeast
  • 100golive oil
  • 850gflourbread or all-purpose
  • 20gsalt

Method

    Mix all the ingredients (, , , , ) in a shallow rectangular pan using a spoon until just combined. Do not knead.

    Cover the pan with parchment paper and let the dough rest for 30 minutes.

    Perform a stretch and fold: lift the dough, stretch it, and fold it over itself. Repeat until the dough resists. Cover and rest for another 30 minutes.

    Perform another stretch and fold, followed by a coil fold. Cover and rest for 30 minutes.

    Perform one more stretch and fold, then cover and let the dough rise until doubled in size.

    Preheat the oven to 390°F with a sheet pan inside and an empty metal pan on the rack below it.

    Dust the dough with , then turn it out onto a floured surface. Gently stretch it into a rectangle shape.

    Cut the dough into pieces and place them on parchment paper.

    Transfer the parchment with the dough onto the preheated sheet pan. Immediately pour boiling into the empty metal pan below to create steam.

    Close the oven and bake for 20 minutes until golden and crisp. Cool before enjoying.
