A true South African classic: a warm, syrup-soaked dessert that is rich, comforting, and incredibly easy to make. Best enjoyed warm with vanilla custard or ice cream!

Ingredients

  • 5eggs
  • 550gcastor sugar
  • 60gsalted buttermelted
  • 230mlmilk
  • 125gapricot jam
  • 350gcake flour
  • 1tspbicarbonate of soda
  • 1tbspvinegar
  • 330gunsalted butter
  • 130gsugar
  • 750mllong-life whipping cream

Method

    Preheat oven to 175°C and grease a baking dish.

    Beat the and until pale and fluffy.

    Add the melted butter, , and to the mixture.

    Fold in the sifted flour until combined.

    Mix the and together and immediately stir into the batter.

    Pour the batter into the prepared dish and bake for 50 minutes.

    Ten minutes before the pudding is done, prepare the syrup by heating the butter, , and cream together until smooth.

    Remove the pudding from the oven and loosen the edges with a spatula.

    Prick the pudding all over with a fork or tooth pick (make sure there are enough holes) and slowly pour the warm syrup over it.

    Allow to rest for 10–15 minutes before serving. Serve warm with whipped cream, vanilla custard or ice cream.
