Flaky golden pastries filled with luscious mascarpone whipped cream and a naturally sweet homemade blueberry sauce these will be the perfect tea time treat.

Ingredients

  • 1Sheet of puff pastry
  • 1tbspGranulated sugar+ 1 additional tbsp for dusting before baking
  • 1Egg
  • 1tbspMilk
  • 225gBlueberries
  • 2tbspSugar
  • 1tbspLemon juice
  • 250mlWhipping cream
  • 150gMarscapone
  • 1tbspPowdered sugar
  • 1tbspVanilla extract

Method

    Preheat your oven to 220°C. Roll out your pastry and sprinkle with 1 tbsp of and cut into 6 individual squares

    Fold each square into a triangle, pinching the corner closed

    Beat the and together and brush each pastry triangle with the mixture. Dust with and bake for 20-22 minutes or until the pastry is golden. Once the pastry is cooked allow to cool fully before assembly.

    Place in a saucepan and gently simmer for 15 minutes until jammy (on a medium low heat). Set aside and allow to cool

    Whip the heavy cream until peaks are formed. Gently fold into the mixture.

    Once the pastry is cooled, gentle open the pastry and pipe in your mixture. Spoon the berry compote onto the cream and gently press closed. Dust with and serve.
