A summer take on the classic American peach cobbler, using ripe nectarines topped with a homemade buttermilk biscuit. Serve with vanilla ice cream.

Ingredients

  • 7nectarines7-8 ripe large nectarines
  • 40gbrown sugar
  • 120gwhite sugar
  • 1tbspcornflour
  • 15mllemon juice
  • 1tspvanilla extract
  • 1tspcinnamon
  • 0.5tspBritish mixed spiceor pumpkin spice
  • 250gplain flour
  • 1.5tspbaking powder
  • 0.3tspbicarbonate of soda
  • 120gcold buttercubed
  • 120mlbuttermilk
  • 1eggfor egg wash

Method

    Peel and chop the into 1-2 inch slices.

    Mix the with , 20g of the , , , vanilla, , and mixed spice. Place into a 12-inch round pie tray and bake for 15 minutes at 170°C.

    To make the topping, sift together the flour, , and into a bowl. Add the remaining 100g .

    Rub in the until the mixture resembles a fine, sandy texture.

    Pour in the slowly until combined into a slightly sticky but firm pastry.

    Take handfuls of the biscuit batter and place in segments on top of the slightly baked . Flatten and try to cover as much of the filling as possible.

    Brush with a beaten and sprinkle with granulated or demerara sugar.

    Bake for a further 35-45 minutes until the biscuit topping is golden.
