A hearty one-pot stew with tender lamb, honey, potatoes, and olives, baked to perfection.

Ingredients

  • 1lemonquartered
  • 8clovesgarlicpeeled, chopped
  • 4leavesbay leaves
  • 0.5bunchoregano
  • 1.5kgde-boned lamb shouldertrimmed excess fat, cut into large chunks
  • 500mlchicken stock
  • 2tbsphoney
  • 2vine ripened tomatoescut into wedges
  • 600gDutch cream potatoespeeled, cut into large wedges
  • 2tbspextra-virgin olive oil
  • 0.5cupKalamata olives
  • Greek yoghurtto serve (optional)

Method

    Preheat the oven to 180°C. Place the , , , and the lamb in a large, shallow sided heavy-based pan. Season with salt and pepper and toss to coat.

    Add the stock and and layer the tomatoes and potatoes on top. Drizzle over the oil and season again with salt and pepper.

    Cover with a tight-fitting lid and bake for 2-2 ½ hours until the meat is very tender. Remove the lid and scatter over the olives. Increase heat to 200°C and cook uncovered for a further 20-25 minutes or until the potatoes are golden brown. Serve with yoghurt if using.
