Method

Add the almonds, , coconut, , , vanilla and to a large bowl. Mix until everything is evenly combined.

Scoop the mixture onto a parchment-lined baking sheet and gently shape into cookies. Bake at 325°F/230°C for 12–15 minutes, or until the edges are lightly golden. Let them cool completely so they can firm up.
