This is one of those recipes that never fails. Minimal prep, barely any ingredients, and somehow it always ends up being the first to go. Soft, falling-apart lamb with crispy edges and the richest flavour. A proper crowd favourite.

2kglamb shoulderbone-in or deboned
4sprigsrosemary
2clovesgarlic
3tbspbalsamic vinegar
saltbig pinch
olive oildrizzle
1cupwater
Method

Preheat oven to 130°C.

Place the lamb into a heavy-based ovenproof dish with a lid. Scatter over the and , drizzle with and , then season generously with . Pour the into the bottom of the dish.

Cover the lamb with a sheet of baking paper first, then place the lid on tightly.

Cook for 3 hours. Remove from the oven, baste the lamb and reduce the oven temperature to 100°C.

Return to the oven and cook for a further 4 hours (or 3 hours if using deboned lamb). Baste once or twice during cooking (every hour) and add a splash more if needed.

Once done, place onto a serving platter and shred the meat apart. Serve with roasted potatoes, in wraps, or over a big salad.
