Paprikash is a classic Hungarian stew bursting with vibrant paprika. This version features juicy pork meatballs gently simmered in a lush creamy tomato and paprika sauce. It's incredibly simple to make and so comforting. It's one of my favourite TV dinners. You'll notice there's no carb in the recipe, but before you hurl the book across the room, that was intentional, because you could go in several directions here. Think buttery pasta, creamy mashed potatoes or fragrant rice. You pick the vibe and go for it.

Ingredients

  • 2onions, peeled and finely sliced
  • 2tbspolive oil
  • 500gminced porkI use 20% fat
  • 2tspgarlic powder
  • 3tsppaprikaplus extra to serve
  • 300mlhot chicken stockfrom 1 stock cube
  • 3tbsptomato puree
  • 100gsoured cream
  • finely chopped chivesa few
  • salt and pepper

Method

    Preheat the oven to 220°C/200°C fan/gas 7. Pop the onions into a 24x32cm roasting tin. Add the and season with . Toss together and roast for 18 to 20 minutes or until they are looking soft and charred.

    Meanwhile, mix the pork together with 1 teaspoon of the , 1 teaspoon of the and a good pinch of . Roll into 16 little meatballs.

    Whisk together the chicken stock, , the remaining 1 teaspoon , the remaining 2 teaspoons of and a good pinch of .

    Reduce the oven temperature to 200°C/180°C fan/gas 6, remove the tin and give the onions a good mix. Pour in the stock. Add the meatballs and return to the oven for 10 to 15 minutes until the meatballs are just cooked through.

    Stir the into the sauce and check the seasoning adding to taste. Garnish with the chives and a big pinch of . Serve immediately.
