Fresh, crunchy, colorful, and packed with flavor! This Spicy Purple Cabbage & Cucumber Salad is loaded with crisp cabbage, carrots, cucumber, red bell pepper, and cilantro, all tossed in a savory, garlicky sesame dressing. Perfect as a refreshing side dish or light meal.

Ingredients

  • 0.5small headpurple cabbagefinely shredded
  • 4largecarrotsjulienned
  • 1largeseedless cucumberor 4 mini cucumbers, sliced into thin sticks with soft center removed
  • 1largered bell pepperthinly sliced
  • 1heaping tspsalt
  • 0.5bunchfresh cilantro
  • 5garlic clovesminced (4–6)
  • 2tspgochugaruadjusted to taste (1–3 tsp)
  • 0.3cupavocado oil
  • 2tbspsesame oil
  • 2tbsplight soy sauce
  • 1.5tbsprice vinegar1–2 tbsp
  • 1tbspoyster sauce
  • 0.5tbspsugaroptional
  • 1.5tbspwhite sesame seeds1–2 tbsp

Method

    Finely shred the and julienne the . Sprinkle with the , toss well, and let sit for 5–10 minutes to soften. Drain any excess liquid.

    Slice the cucumber and into thin strips. Remove the soft, seedy center of the cucumber if needed.

    Heat the and together until hot. Place the garlic, chili powder, sesame seeds, , and in a small heatproof bowl. Carefully pour the hot oils over the mixture. Add the soy sauce and . Add a pinch of only if needed, then mix well.
