A slow-cooked South African style tripe stew served with soft dumplings.

Ingredients

  • 1kgsheep's tripe, cleaned
  • 15mlcooking oil1 tablespoon
  • 1kgmutton neckcut into 20 mm slices
  • 20mlmild curry powder1.5 tablespoons
  • 375mlapple juice1.5 cups
  • 375mlmeat stock1.5 cups
  • 20mlsalt1.5 tablespoons
  • black pepperfreshly ground to taste
  • 15mlsmooth apricot jam1 tablespoon
  • 10piecespickling onions
  • 12smallpotatoes
  • 250mldried apricots1 cup
  • 360gcake flour750 ml / 3 cups
  • 10mlbaking powder2 teaspoons
  • 7mlsalt0.5 tablespoon
  • 30mlfreshly chopped parsley2 tablespoons
  • 10mldried parsley2 teaspoons
  • 450mlwater1.33 cups

Method

    Rinse the tripe in cold , pat dry, and cut into cubes; set aside.

    Heat in a potjie and brown the mutton slices.
  3. 3
    Add the curry powder to the meat and fry gently.

    In a small pan, heat together the and .

    Pour the liquid into the potjie and add the tripe.

    Season with and pepper, then cover and simmer over medium coals for 3-4 hours.

    While the meat is cooking, prepare the dumpling mixture by combining flour, , , parsley, and enough to make a soft dough.

    Add a little of the cooking liquid to the apricot jam and mix into a paste.

    Drop spoonfuls of the dumpling dough on top of the stew.
