A soft, fluffy breakfast loaf inspired by an almond croissant. Great for prepping, warming up, and enjoying with a dollop of yoghurt.

Ingredients

  • 100gSmooth Almond ButterPip & Nut recommended
  • 3eggs
  • 200gGreek yoghurt
  • 80mlmilk
  • 3tbsphoney
  • 1tspvanilla extract
  • 1tspalmond extract
  • 140goat flour
  • 60gground almonds
  • 1.5tspbaking powder
  • 0.5tspbicarbonate of soda
  • pinchsalt
  • 2tbspCrunchy Almond Butterfor frangipane butter
  • 1tbspmaple syrup or honeyfor frangipane butter
  • 2tbspmilkfor frangipane butter
  • 40gflaked almondsfor frangipane butter
  • Greek yoghurtto serve

Method

    Preheat the oven to 170°C fan and line a 2lb loaf tin with baking paper.

    In a large bowl, whisk together the , , yoghurt, , , vanilla, and until smooth.

    Add the , , , , and , then fold gently until just combined.

    Pour the batter into the lined tin and smooth the top.

    In a small bowl, stir together the , maple syrup (or ), and until smooth and spoonable. Dollop half of this mixture over the top of the loaf batter evenly, reserving the remaining topping for serving.

    Bake for 20 minutes, then loosely cover with foil and bake for a further 30-40 minutes, or until risen and a skewer inserted into the centre comes out clean.

    Leave to cool in the tin for 10 minutes, then transfer to a wire rack.

    Slice and serve with and a little of the reserved almond butter topping on each portion.
