These one-bowl yoghurt muffins have major chocolate cupcake vibes with 8g protein and 3g fiber per muffin and use no protein powder! Perfect for lunchboxes or as a little pick me up snack! They are tender, moist, and super chocolatey.

1.3cupsplain Greek yogurt (2-5% m.f.)
2large eggs
0.5cupmaple syrup
0.3cupolive oil
0.3cupmilk
1tbsppure vanilla extract
1.5cupsall purpose flourplus 2 tbsp
0.5cupunsweetened cocoa powder
2.5tspbaking powder
0.5tspbaking soda
1tspsalt
1tspinstant espresso powderoptional
0.7cupchocolate chipsplus more for topping
Method

Preheat the oven to 180° C. Line a muffin tin with silicone or parchment paper liners and set aside.

Add the Greek yogurt, eggs, , , , and vanilla to a large bowl; and whisk to combine.

To the same bowl, add the flour first, then cocoa powder, , and sprinkle the , , and evenly over the top. Mix until just combined, about 2-3 minutes with a spoon or spatula, being careful not to overmix.

Divide the batter evenly between the lined muffin cups, filling them about ¾ full. Top with additional if desired.

Bake for 22–24 minutes, or until the muffins are set and a toothpick inserted into the middle comes out mostly clean with a few moist crumbs.

Cool in the pan for 10 minutes, then transfer to a rack to finish cooling completely.
