An amazing summer snack! This is perfect for those lunches or dinners where you're just a bit peckish! For maximum flavour, choose tomatoes picked small and sweet and left on the vine.

500gNo.1 Dulce Deliciosa Tomatoes2 x 250g packs, left on the vine
4clovesgarlicfinely sliced
6sprigsoregano
2tbspnonpareille capersdrained
5tbspextra virgin olive oil
4slicessourdough
200gfeta1 pack
100gnatural strained Greek yogurt
0.5unwaxed lemonzest only

Preheat the oven to 170°C, gas mark 3. Halve the tomatoes and arrange, cut-side up, in a large baking dish. Nestle in the tomato vines (they add flavour), , sprigs and capers. Drizzle over the oil, then season and roast for 1 hour, basting the tomatoes with the juices halfway through. Set aside to cool – they’re best served warm or at room temperature.

For the whipped , pat the dry thoroughly on kitchen paper. Put the whole block in a food processor with the yogurt, lemon zest and some freshly ground black pepper. Pulse until you have a thick, smooth spread.

Toast or griddle the , then spoon over a little of the oily juices from the tomatoes. Spread with the whipped , then spoon on the tomatoes (discarding the vines and any thick sprigs).
