These warm citrus marinated Castelvetrano olives are bright with a touch of spice, and so simple to pull together making it a perfect snack or antipasto dish to share – or to enjoy all to yourself.

Ingredients

  • 2cupspitted Castelvetrano olives
  • 1wholelemonpeeled into strips
  • 1smallorangepeeled into strips
  • 0.5lemonlemon juice
  • 0.5orangeorange juice
  • 0.5cupBona Furtuna Forte Extra Virgin Olive Oil
  • 5clovesgarlic clovessmashed
  • 1teaspoonAglio e Oglio Herb BlendBona Furtuna brand
  • 2sprigsfresh rosemaryor thyme
  • 0.3teaspoonSicilian sea salt with lemonBona Furtuna brand
  • olive brinea splash, if olives came packed in brine

Method

    Add the citrus peels, Forte Blend Olive Oil, garlic, Aglio e Oglio blend, rosemary, and the sea salt to a small saucepan. Warm over medium-low heat for about 5 minutes. You want everything gently heated so the garlic softens and infuses the oil without browning.

    Stir in the olives, the juice of half the , the juice of half the , and a splash of brine if using. Toss well to coat and simmer for another minute.

    Remove from heat.

    Let the olives sit for at least an hour so the flavors meld, or refrigerate and marinate up to a few days.

    To serve, gently warm them again or bring to room temperature. Pour everything - especially the infused citrusy oil - into a shallow bowl.
