High-fibre, high-magnesium meal prep breakfast bars with oats, nuts, seeds, and blackberry chia filling. (You can swap in any berry you like - we like a slightly tart berry)
Ingredients

2cupsblackberries/blueberriesfrozen or fresh
2tbspchia seeds
1tbspMaple/date syrupor liquid sweetener of choice, or 2 tbsp for desired sweetness
2tsplemon juice
2mediumbananas
2tbspAlmond butteror any nut or seed butter
1.5tbspMaple syrup1-2 tbsp for the jam
0.7cupOat milkUse regular milk if preferred
3cupsSteel cut oats
0.5cupalmond flour
2tbspground flaxseed
2tbsphulled hemp seeds(Optional if you have on hand
2tbsppumpkin seeds

Method

Add the berries to a small pot over medium heat. Cook for 5-7 minutes, mixing frequently. Once heated through, mash with the back of a spoon or fork into a jam-like consistency. Remove from the heat and mix through the , 1-2 tbsp and . Set aside to thicken (off the heat!).

Preheat oven to 180°C and line a square baking tin with parchment paper.

Mash the with a fork in a mixing bowl. Mix through the nut butter, remaining , and until incorporated.

Add in the remaining dry ingredients: the oats, , seeds, , , and . Mix well.

Transfer 2/3 of the oat mixture to the base of the lined baking tin. Use the back of a spoon or spatula to press the mixture down firmly and until evenly spread out. Top with the thickened blackberry filling and spread out. Then use your fingers to crumble over the rest of the mixture for texture (think berry crumble consistency for the topping). Lightly press down so it sticks.

Bake in the oven for 30 minutes, rotating halfway.
