Crispy, savory fritters packed with vegetables and chickpea flour, perfect as a snack, side dish, or light snack. A high-fiber high-veg option for all!

Ingredients

  • 2cupszucchinigrated (about 2 medium)
  • 1mediumcarrotgrated
  • 0.3cuponionfinely chopped
  • 2clovesgarlicminced
  • 1cupchickpea flour
  • 2tbspfresh parsley or cilantrochopped
  • 0.5tspsea saltplus more to taste
  • 0.5tspblack pepper
  • 0.5tspturmericoptional
  • water1–2 tbsp, as needed
  • avocado oilfor pan-frying or baking

Method

    Sprinkle the grated with a pinch of salt and let sit for 10 minutes. Squeeze out as much liquid as possible.

    Add the , , , , parsley or cilantro, , salt, pepper, and to a bowl. Mix together.

    Add 1–2 tablespoons of , a little at a time, until a thick batter forms that holds its shape.

    Heat a non-stick skillet over medium heat with a thin layer of . Scoop the batter into the pan, flatten slightly, and cook for 3–4 minutes per side until golden. Add a little more oil between each batch, as can stick once the oil has been absorbed.

    To bake: Preheat the oven to 400°F. Line a baking sheet with parchment paper and lightly brush with . Scoop and flatten the fritters, bake for 10 minutes, flip, then bake for another 8–10 minutes until lightly golden.
